Mixologist Miguel Sanchez and Chef Saul Montiel of Cantina Rooftop are a winning team serving up some exceptional contemporary Mexican food paired with delicious and inventive tequila and mezcal cocktails.

The restaurant is becoming widely known for Sanchez's expertly crafted libations with a focus on premium tequilas and mezcals. The menu reflects new cocktails that use seasonal ingredients.

Sanchez brings a wealth of experience to Cantina Rooftop having worked in New York City bars and restaurants that include Coppelia, Bodega Negra, and Tacuba.

Broadwayworld.com had the pleasure of interviewing Miguel Sanchez for our "Master Mixologist" feature.

When did you first become interested in the cocktail culture?

I became interested in mixology when I started working in the industry about 15 years ago.

What innovations in mixology and bartending do you find fascinating?

I am fascinated by the flavors, colors and textures of the fruits and aromas from different spirits such as mezcal and tequila.

How do restaurant and bar guests encourage your creativity?

They encourage me a lot because I feel confident with what I love. It seems guests are very happy and they make me continue to work hard learning new flavors, aromas, and techniques. I am continuing to grow in the field of hospitality.

What are your preferred "classic cocktails" and why?

I enjoy classic cocktails because they have history and they transport me to different parts of the world.

What are some of your favorite infusions and how you like to use them in drinks?

I like to use Mexican peppers like chile de arbol, pasilla, and chipotle. I infuse them with tequila and mezcal. I also use some fruits such a pineapple or cucumbers in vodka.

Tell us about a few of your signature cocktails and why they are distinctive.

Mezcal Smash has pineapple, mint , agave and mescal. It's a twist from the traditional whiskey smash. Celeryna, uses a fresh pineapple , celery, agave and mezcal.

I love to use mezcal in cocktails.

Mezcal and oysters. This pairing brings rich flavors together.
