Master Mixologist: Kyle Burton of TUMULTYS in New Brunswick, NJ

Kyle Burton of Tumulty's Pub in New Brunswick is our "Master Mixologist." Burton was born in 1987 in Hamilton, New Jersey and grew up in the Trenton area. He attended Nottingham High School and graduated in 2005. Right after high school, Burton joined the United States Navy and wanted to travel and see the world. After he left the Navy, he started a new chapter in his life and married his longtime childhood friend and they now have two beautiful children. Burton and his family moved to New Brunswick because they wanted live in a city environment and knew there would be greater opportunities in the hospitably field.

Burton's passion for bartending and the service industry was clearly influenced by his wife. He has said many times, "she has taught me everything!" Burton knows that he has chosen the right profession because he loves what he does and likes the challenges of meeting new people and maintaining friendships with regular customers who have been coming to Tumulty's Pub for generations.

Broadwayworld.com interviewed Kyle Burton about his career as a mixologist and Tumulty's Pub in New Brunswick.

When did you first become interested in the cocktail culture?

When I worked my first shift as a bartender. I looked around at all the bottles and wanted to figure out all the combinations to make special drinks.

What innovations in mixology and bartending do you find fascinating?

I really enjoy the greater focus on food pairings and infusions. I recently attended a 7-course dinner that had a beer/wine/liquor with each course of food. I knew than how important the pairings were to the whole dining experience.

How do restaurant and bar guests encourage your creativity?

I work in a college town where indecisiveness is prevalent. A simple series of questions often leads the quest to something they may not have tried before.

What are your preferred "classic cocktails "and why?

Those that know me, are well aware I am a pushover for a well made "Old Fashion or Boulevardier." These cocktail made with Makers 46 or Blantons. Whiskey is pure heaven!

What are some of your infusions and how you like to use them in drinks?

I like making Bloody Marys and infusing bacon and basil to compliment the taste of tomato and lime. A hint to the BLT sandwich that is iconic.

Tell us about a few of your signature cocktails and culinary selection

One of our best sellers is " The Honey Bourbon Smash, " a perfect mix of bourbon, vanilla, citrus and honey. Another classic drink is our "Irish Coffee" we are a true Irish Pub and many people come here to get that drink.

I am a simple guy who likes the basics. Every Christmas the perfect match is honey bourbon glazed ham and an "Old Fashion." The savory bourbon ham with the compliment of whiskey - great pair!

Tell us about Tumulty's where you are are their Mixologist.

Tumulty's Pub has been around for decades and moved to the current location on George Street in 1982. This place is one of the original restaurants and pubs in New Brunswick. The structure of the building inside is unique and feels like a Swiss chalet, which huge high ceilings and thick gorgeous wood beams. The pub also has always had trains running along a track, which keeps children and adults fascinated. It is the coolest place to work and I am grateful that I can be a part of this environment and its history!

Tumulty's Pub is located at 361 George Street, New Brunswick, NJ 08901. They are open on Sunday from 12:00 pm to 11:00 pm, and Monday to Saturday from 11:30 am to 12:00 am.
