Manny Salas is the Executive Chef of The Rail House 1449 in Rahway New Jersey and its casual bistro, The Rail House Bar. He brings his impressive background to the acclaimed Garden State restaurant. Guests and food critics throughout the metropolitan area are hailing his gourmet menu and creativity.
After attending culinary school, Salas worked as a young sous chef in upscale restaurant establishments and rose to the post of Executive Chef of several New York City restaurants. He was instrumental in opening a very successful NYC gastro-pub while still working at Lillie's on 17th Street in Union Square.
Salas' work is inspired. He is proud to work with his team and has a truly innovative culinary vision. Salas is pleased to be working with Rail House 1449 with the owner, Mr. Bobbi Fishman.
Broadwayworld.com had the opportunity to interview Executive Chef Manny Salas about his passion for cooking and The Rail House.
What was your earliest interest in cooking?
My earliest interest in cooking was during summer breaks when I was in school. I must have been in 2nd or 3rd grade when my sister Nicole and I would stay up until 2:00 am to watch the show "How to Boil Water" and cook their recipes.
Who were some of your career mentors?
My wife Erin and my daughter Maddax are my biggest fans but also my harshest critics.
Marco Pierre White was my inspiration and role model in the culinary arts. He took "no short cuts." That's a bit ironic because he is now a Knorr spokesman.
What culinary styles have influenced your career?
I am not bound by one specific cuisine style. Life is short so I want to experience a wide variety of tastes and share them with The Rail House guests.
What is your favorite meal?
Definitely pizza.
