BWW Previews: BTH, By the Hudson, Opens 9/18

BTH stands for "By the Hudson." This inviting, comfortable, yet elegant new American restaurant is helping to pioneer the historic neighborhood of West Harlem as a popular dining destination. The restaurant will have its public opening this week on Thursday, September 18th.

With 360-degree views of the Hudson River and the West Harlem Piers, BTH's new take on American cuisine, innovative cocktails and top service, BTH plans to draw guests to the evolving neighborhood that already includes restaurants such as Red Rooster and The Grange. They are planning an entertainment schedule that will include live jazz music on Sundays.

Surrounded on all sides by stunning, unobstructed views of the Hudson, guests of BTH can enjoy the panorama no matter where they are seated. The lounge features a high-backed sofa and a centrally located circular bar. The dining room décor features dark wood and earth tones with comfortable banquettes and high-backed chairs. And, there's a unique very unique installation, "The Wave Wall," highlighted by ever-changing colored lights.

Owners, Fernando Reynoso and Giulio Tata share a passion for food and wine and they have found the perfect venue for to express their interests. BTH is also a place where they have the unique opportunity to give back to the community.

Lusianie Otero is an award-winning, culinary professional. Initially Trained in the culinary arts at Escuela Hotelera de San Juan, she possesses a unique blend of creative flair and passion for food. One of her goals is to inspire and mentor other young female chefs. At BTH, she puts her own spin on American favorites, with European and Latin touches.

The food choices at BTH are vibrant, wonderfully seasoned, and meant to pair well with both wine and cocktails. The BTH signature seafood tower is built with chilled and purified oysters on the half shell, crab legs, mussels, lobster tail, little neck clams, jumbo shrimps accompanied by red wine mignonette and cocktail sauce. Appetizers include guava crab cakes paired with fruit chutney and fresh herbs. Seasonal soups for fall include cream of pumpkin with caramelized leeks and sautéed clams and roasted local corn chowder.

Wild n' salmon is served with black wild rice and a tangy pineapple-tomato compote. The creative take on surf and turf features grilled lobster drizzled with vanilla bean butter paired with filet mignon and creamy, slightly sweet parsnip puree. Their veal osso buco is served with pappardelle escalivada and gremolata. Side dishes include truffle parmesan fries, rice pilaf, whipped mashed potatoes and sautéed field vegetables. Desserts include classic tiramisu, enticing crème brûlée and a decadent chocolate mousse.

General Manager, John Di Iorio has over 15 years of experience in the industry, ranging from the East Coast to the West Coast. His vision for the cocktail menu at BTH is to break away from the typical gender-linked cocktails, to create cocktails that cannot be considered either masculine or feminine. They are set on common ground, using fresh fruit juices, house-made syrups and other unusual ingredients to create cocktails such as The Prataurian with Reposado Don Julio tequila, green chartreuse, celery bitters, rosemary simple syrup and lime juice, or the Antique BTH featuring sage leaves, agave, pear nectar and Bulleit bourbon.

BTH's sommelier is Chris Sapienza, a police sergeant by profession, a former U.S. Marine and Desert Storm veteran and graduate of the FBI National Academy in Quantico, VA, has been collecting wine for nearly thirty years. He is Vice Charge de Mission in the Connecticut chapter of the Chaine des Rotisseurs, one of the oldest and most prestigious food and wine organizations in the world. He is also a member of the Societe Mondiale du Vin and the New York chapter of the International Wine and Food Society. The culture at BTH includes extensive training of staff, storing wine properly at the proper temperature and in the appropriate stemware, at very reasonable prices for their guests.

After their initial opening, BTH plans take-out service. Open for lunch and dinner, there are also plans for weekend brunch and they will be available for private parties.
