In a first time homage to its namesake region of France, Le Périgord , the venerable Sutton Place bastion of French cuisine, will present a welcome gift to diners on Sundays and Mondays of the black truffles known as the "Diamonds of Périgord."
The almost incomparable delicacy will be generously shaved on top of a complimentary small plate portion of risotto. These fresh winter black truffles from Périgord in the Dordogne are treasured for their superb depth of flavor characterized as an exquisite blend of earth and rich chocolate, a seductive bouquet of savory and sweet with notes of mint, forest mushrooms and hazelnuts. Their robust aroma is equally enticing with essences of nuts, earth and garlic. The world's most famous black truffles, the Périgord's grow with oak and hazelnut trees and are distinguished from other European black truffle varieties by their interior appearance, which has white veins running through the black flesh. Scarcer and more desirable, they are second only in their high price tag to the white truffles of Italy's Piedmont.
The complimentary risotto with black truffles will be offered to all diners on Sundays for dinner and on Mondays for lunch and dinner starting Monday, March 7th. Their presentation will continue through Monday, March 28th and then again on April 1st (a Friday for lunch and dinner), the date Le Périgord opened in 1964. Owner Georges Briguet notes, "The truffles are present from us to our customers in honor of our 52nd anniversary."
