With Valentine's Day quickly approaching, the original Wine of the Month Club owner and cellarmaster, Paul Kalemkiarian, stopped by CBS Los Angeles to discuss the ideal wine and chocolate pairings: http://bit.ly/WOMC_ValentineWineChoc2018.
Gérard Bertrand Rosé or Stella Rosa Moscato with Lindt White Chocolate Truffles
Taylor Fladgate Port with either Lindt or Vanini Milk Chocolate
For a Song Cabernet Sauvignon or Vallado Touriga Still Wine with Dark Chocolate (90% cacao)
The more intense your chocolate is -80% and up- the more intense your wine should be. Save the sweet and fruity for the white chocolate, and a more complex red, such as a nice Cabernet Sauvignon, for super dark chocolate.
The love of chocolate dates back at least 3000 years, when Olmecs and other early Mesoamerican cultures first discovered its aphrodisiac qualities, and referred to it as 'food for the gods.' Chocolate seed pods were so valuable to the Aztecs and Mayans that they were used as a form of currency. Originally prepared only as a drink, chocolate was served as a somewhat bitter liquid, mixed with spices or corn puree. Because cocoa beans are fermented to smooth and round them out and remove tannins, they pair well with wines that are either light and sweet or dark and heavy.
"When you put wine and chocolate together...sparks, is what I'm thinking," says Kalemkiarian. "Experiment, have some fun with it. That's what it's all about."
