With locations at in The Sanctuary Hotel in Times Square and Hotel 32 32 in NoMad, guests are able to have a full and high-energy meal in a quick and casual setting. Here, guests can enjoy the signature 30-minute omakase for $50 at an eight-seat counter. The meal includes 12 pieces of nigiri including Botan Ebi, Ikura, Uni and the signature surf-and-turf Wagyuni. Sushi by Bou was conceptualized by Michael Sinensky and Erika London of hospitality group Simple Venue, which turns under-utilized spaces into experiential concepts.

The high-end cuisine is complemented by a selection of handmade crafted cocktails, imported sake and rare Japanese whiskeys. Cocktails follow the seasons, but guests can expect Sushi by Bou signatures such as the Yuzu Honey Bee with Maker's Mark Bourbon, honey, Yuzu juice and pink peppercorn, Sake Sangria with seasonal fruits, herbs and spices, and the Bou-Jito with chili-infused Cruzan rum, ginger syrup, lime juice and basil.

The Sanctuary Hotel location is located in the basement and in Hotel 32 32, Sushi by Bou has a counter in the lobby of the hotel as well as an intimate four-seat sushi bar hidden behind an unmarked hotel room door on the 10th floor, serving a 60-minute omakase.
