Gluten is a protein in grass-type grains such as barley, wheat and rye. It is in products like bread, pasta and crackers, but can also turn up in unexpected places, like certain brands of chocolate, deli meats, vitamins, and even some kinds of toothpaste. An estimated 1 in 141 Americans struggle with an intolerance to gluten, also known as Celiac Disease, and yet 83% of those are either undiagnosed or misdiagnosed.
