Cape Cod Select Cranberries take center stage in this quick and easy Cranberry Corn Pudding side dish. It is ideal for brunch, and will delight guests at your next barbeque or holiday meal. Ingredients:
¼ cup of butter
2 eggs
¼ cup sour cream
1 can 14.75 ounces of creamed corn
½ cup of all-purpose flour
½ cup stone ground cornmeal
2 tbsp sugar
¼ tsp salt
¼ tsp pepper
1½ cups of Cape Cod Select Cranberries
Method:
Melt the butter and let cool slightly. In a large bowl, combine butter, creamed corn, sour cream, and eggs. Whisk the ingredients together until blended then mix in the dry ingredients: flour, cornmeal, sugar, salt and pepper. Gently stir in Cape Cod Select Cranberries. Pour mixture in a generously greased round 8-inch round or 8x8 inch square casserole or a similar size pan with a non-stick surface. Bake at 350 degrees for 1 hour. Let cool for 15 minutes before spooning to serve.
Note: The juicy, cranberries will surface in the fluffy pudding. The berries will pop open slightly as it bakes for a perfectly delightful cranberry taste and texture.
