Today, The Toasted Oat, provider of deliciously hand-crafted granola that uses all natural, non-GMO and gluten-free ingredients, is announcing its national launch with Whole Foods Market to deliver the only soft baked granola that serves as a healthy and wholesome breakfast and snacking choice, as well as a pantry staple for everyday menu items, including favorite holiday recipes.

"As a person with a gluten intolerance, my Celiac disease diagnosis inspired me to re-create all our family favorites without sacrificing taste, including this granola recipe from my grandmother. As a sweet surprise, our gluten-free granola is a hit with all consumers because it tastes so good, more like a fresh baked oatmeal cookie than traditional dry granola," said Erika Boll, CEO of The Toasted Oat. The expansion of The Toasted Oat comes on the heels of tremendous momentum for the company, including a 300 percent growth in customers year over year, as well as doubling the team in 2018. The company expects this to continue as it is aggressively hiring and anticipates doubling its team again in 2019.

The number of Americans going gluten-free has tripled in the last six years, jumping to over three million people, according to a study by the Mayo Clinic. The Toasted Oat Cherry Streusel & Sweet Potato Casserole with Marshmallows
Feeds about 6 people depending on appetite, great for holidays (or anytime really!) serve with pork, chicken, duck or wild game and roast turkey. Enjoy!

  • 3-4 sweet potatoes, depending on size, peeled and sliced about ¼ to ½ inch thick
  • 2-3 tablespoons butter, melted
  • ¼ cup Light Brown sugar
  • 1 teaspoon salt
  • Good pinch of pepper, cayenne pepper, cinnamon and nutmeg
  • Splash of water
  • 1 cup The Toasted Oat Cherry Streusel, or as desired
  • ¾ cup smaller sized marshmallows

In small bowl, mix together brown sugar with salt, pepper, cayenne pepper, cinnamon, and nutmeg and reserve. Peel and slice sweet potatoes into even sized disks, if sweet potatoes are very large cut them in half lengthwise and make into half moons.

In individual or appropriate sized casserole dish, layer sweet potato slices evenly and semi diagonally so the slices lean on each other inside the surface of the baking dish (be sure to fill the dish nicely with the sweets as the potatoes will shrink by almost one thirds as they bake). Drizzle potatoes lightly all around with melted butter, splash with water to moisten casserole while it bakes and then sprinkle brown sugar mixture evenly over potatoes.

Place potatoes into 375 degree oven and cook for about 25 to 45 minutes depending on baking dish being used. Potatoes should be about two thirds to three quarters of the way cooked, turning a bit golden brown and just about fork tender. Turn up oven to 425 degrees; meanwhile, remove the casserole and sprinkle cherry oatmeal streusel liberally and evenly all around and over the potatoes as desired, arrange and lightly press marshmallows over the streusel and return to the oven to brown, about 8 to 10 minutes. If the potatoes are getting soft and tender, turn on the broil feature for a minute or so to finish browning.
