Chef Miguel hails from Guerrero, Mexico, where he worked at his parents' small family-run restaurant, helping his mother and father in front and back of house, learning every facet of the industry. He arrived in New York in 1996 and worked in French and Italian restaurants throughout Manhattan and Brooklyn, finding a knack for composing seafood dishes and mixing ingredients. He arrives at La Pulperia each morning at 9 a.m., preparing for the day and testing new dishes to music, getting into his groove. The menu features classic Latin dishes re-imagined and intricately plated showstoppers, which mirror performances on Broadway located just a few blocks away.

Broadwayworld had the pleasure of interviewing Chef Miguel Molina about his career and La Pulperia for our "Chef Spotlight."

What was your earliest interest in cooking?

I was helping at friend's bakery in Mexico when I was 13 years old to earn a few pesos and not ask my parents, who were already struggling, and the real love for the kitchen started when helped my parents who had a small fonda with a very small kitchen, when I would see my parents and grandma I felt motivated in learning.

Did you have mentors?

My grandma and my mom, my one and onlys.

What culinary styles have influenced your career?

I have been working in New American, Italian, and Japanese cuisines (just a little of everything I would say). I believe practice and dedicated time is the best schooling. My experience then led me to an invitation to La Pulperia where I was invited to create and run the menu and cuisine.

What do you consider the most distinguishing features of your work as a chef?

I'd say it is personal. I like to read a lot and experiment with different ingredients. I am not afraid to think and do out of the box cuisine. I am always focusing on giving it my touch while keeping it authentic.

What is your favorite meal or meals?

I love Korean, seafood, and my street tacos but what I miss the most are my mother and grandma's meals.

Tell me a little bit about your restaurant for our readers.
