BWW Reviews: FOOD FOR THOUGHT Event and Polident Gives Denture Wearers Great Recipe Ideas

A recent "Food for Thought" event was held at the Miette Culinary Institute on Mulberry Street in New York City. Polident® and Super Poligrip® products were displayed with summer foods that many denture wearers typically avoid. A new survey shows denture wearers are challenged when selecting which foods to eat. The number one concern for denture wearers is getting food stuck in or under their dentures which leads them to avoid eating summer delights like corn and apples.

Attendees learned how to prepare delicious summer foods that can be enjoyed by denture wearers and many more. Broadwayworld.com has one of the salad recipes by Chef Sui Lon Chan that all of our readers will enjoy:

Composed Salad with Basil Vinaigrette

Serves 6-8

Ingredients

1 lb. of mixed lettuces, cleaned and dry

3 cups of fresh cooked corn off the cob

2 lbs. of sliced Steak (NY Strip), cooked medium rare, sliced thin (1/4 inch)

1 ½ cup of sliced apples

1 cup of Toasted walnuts

Basil vinaigrette Ingredients

½ cup olive oil

1 tbsp. Dijon mustard

Juice of ½ lemon

½ tbsp. wine vinegar

1 egg yolk (optional)

1 bunch Italian basil leaves (1 packed cup) washed and dried, or Thai basil for a more peppery flavor pinch salt

Procedure

  • Add all ingredients together in blender or food processor. Set aside in the refrigerator until ready to use. It will keep for 5 days if made without the egg. Or 3 days with the egg.
  • Apples: washed, dried, and cored. No need to peel. Cut into slices or chunks. Keep in a cold water bath with a half of a lemon to prevent browning if making ahead of time.
  • Walnuts: hulled. Place on a sheet pan and toast in a preheated oven at 350 degrees for 6-8 minutes. Shaking the pan after 4 minutes to redistribute the nuts. Nice fragrant and toasted remove and cool.
  • In a large bowl add the lettuce, corn, and apples. Toss with the vinaigrette and garnish with the sliced steak (or grilled veggies) and the toasted walnuts.
