Wanna Enchilada? Abuelo's Mexican restaurant is asking guests this question with the launch of its new, limited time only promotion that highlights the company's mouthwatering, hand-rolled and made-fresh-to-order enchiladas. The new enchilada promotion, which is running now through November 25, 2013, highlights Abuelo's extensive selection of enchiladas - that includes a total of seven different enchilada varieties and eight different sauces to create your own enchilada masterpiece - as well as two new enchilada entrées that will be offered during the promotion. In addition, Abuelo's has introduced two new selections to their existing line up of popular Tapas and Small Bites selections.

Created by Executive Chef Luis Sanchez, Abuelo's new menu selections include Tia Sarita Enchiladas, named after Chef Luis' fiery and spirited Aunt Sara, which features two seasoned beef enchiladas, topped with Abuelo's new fire-roasted queso sauce. Also new is the Cancún Shrimp Enchiladas, which include two delicate crepes filled with plump, juicy shrimp, fresh baby spinach, corn and diced tomatoes, then covered in a silky jalapeño sherry cream sauce.

"We are excited to spotlight our hand-rolled, made-from-scratch signature enchiladas," said Robert Lin, president of Food Concepts International, Abuelo's parent company. "Chef Luis has created incredible new dishes to add to our already-wide assortment of enchiladas, all at affordable, everyday prices. We hope that enchilada lovers will stop in and enjoy our celebration."

In addition to the two new enchilada items, Abuelo's will highlight several existing enchilada favorites during the promotion including:

  • The Monterrey - Sour cream chicken enchilada, avocado enchilada, spinach enchilada, chicken ranchera enchilada, cheese chile relleno, crispy chicken taco and guacamole, and served with refried beans and your choice of Papas con Chile or Mexican rice.
  • Ribeye Steak and Enchiladas - Choice 10 oz., hand-cut ribeye steak, wood-grilled and served with two enchiladas of your choice, along with Papas con Chile and charro beans.
  • Enchiladas de Cozumel - Three delicious crepes filled with fresh guacamole, covered in a rich white wine sauce with a medley of seasoned shrimp, scallops, mushrooms, fresh spinach and roasted peppers. Served with seasonal vegetable medley and cilantro lime rice.
  • Enchiladas Dinner - Choose from seven different enchilada varieties and eight sauces to create your own enchilada masterpiece.

Guests can complement their meal with Abuelo's newest Tapas and Small Bites items. These two newest selections include Queso Fundido, which combines fresh, sautéed mushrooms and roasted Anaheim, Poblano and red peppers, blended into melted Monterrey Jack and Mozzarella cheeses, and served with warm flour tortillas. Guests seeking a cool and fresh way to start out their meal will enjoy the new Mango Infused Guacamole, a fresh, made-from-scratch guacamole served with a refreshingly light and fruity homemade mango salsa.

"Our new Tapas and Small Bites menu has proven to be quite popular with our guests," added Lin.

Additionally, Abuelo's invites guests to enter its Big Enchilada Sweepstakes where two winners will be selected to receive free enchiladas for a year. Guests may enter on Facebook or by completing entry forms in every Abuelo's companywide.
