Chef Brian Malarkey's Ocean-To-Table Restaurant Herringbone to Open at ARIA

Brian Malarkey's acclaimed ocean-to-table concept, Herringbone, will soon find its newest home in Las Vegas. Opening this winter in the AAA Five Diamond ARIA Resort & Casino under the direction of Executive Chef Geno Bernardo, the popular restaurant will bring its California-inspired coastal cuisine to locals and tourists alike. Like its successful flagship La Jolla, CA and recently opened Santa Monica, CA locations, Herringbone Las Vegas will stay true to its fresh, beachy-chic roots, offering a market-driven menu, relaxed yet refined décor complete with indoor and outdoor seating, and live music all in the thriving heart of The Strip.

"I've loved getting to know Las Vegas, and am thrilled to work with Geno to introduce Herringbone - one of my favorite restaurant children - to ARIA," said Malarkey, who opened his acclaimed Searsucker in Las Vegas last spring. "Our goal is simple: Combine the freshest possible resources available with beautiful surroundings to provide the community with a unique and unforgettable dining experience."

Herringbone will pair pristine seafood and responsibly sourced meat with Farmers Market produce, creating an accessible menu infused with Malarkey's well-known sense of whimsy. Featured dishes that evoke the restaurant's signature "Fish Meats Field" philosophy will include a Skate Wing Schnitzel with spätzle, sea beans, Hen of the Woods mushrooms, and mustard jus and a Roasted Colorado Lamb Rack with squash, corn, basil, piquillos, padrons, and harissa aioli.

The distinctive cuisine will be complemented by a refreshing selection of handcrafted cocktails anchored in the restaurant's market-driven sensibility. Fanciful specialties will include The Peter Rabbit featuring Pimm's #1, bruised basil, pressed lemon and pickled carrot, as well as the Grow a Pear with cucumber-infused gin, cilantro, jalapeño, St. Germain and lemon. Rounding out the beverage program is a thoughtfully composed wine list and, for a more casual evening, a selection of craft beers.

Conceptualized by acclaimed designer Munge Leung, Herringbone Las Vegas will charm diners via a coastal aesthetic imagined with a modern sensibility. Inspired by trips to the shore, the sophisticated space will utilize a variety of light woods and warm, layered textiles, accented with eclectic, rustic touches. Outside, a sweeping patio surrounded by a lush garden landscape bring the restaurant's locally sourced ethos to life, providing the ideal backdrop for a spirited al fresco meal.

Herringbone will be located at ARIA at 3730 S. Las Vegas Blvd, Las Vegas, NV 89109 and will be open for lunch and dinner daily, with weekday Oyster Hour and weekend brunch to follow.
