Vegan Chef Promotes New Cookbook on Nationwide Tour; Sampling Vegan Recipes in Upscale Specialty Stores

When Chef Beverly Kumari, author of "Nouveau V The New Renaissance of Vegan and Vegetarian Cuisine," isn't working as an assistant sous chef at the Marriott, she spends most of her free time touring throughout the country, signing cookbooks at the upscale specialty retailer, Williams Sonoma and educating the public on preparing easy and delicious vegan dishes. She currently has book signings from the west coast to the east coast; from San Francisco, California to New York City, New York.

Her new cookbook, co-written with Executive Chef Jonathan Layton, Executive Chef Abdellah Aguenaou and Executive Chef Douglas De la Reza, encompasses the many facets of vegan and vegetarian cookery. Each of the timeless meat based recipes have been re-invented with vegan or vegetarian friendly ingredients. The chefs have taken timeless recipes such as the classic Italian Bolognese and veganized it; using a textured vegetable protein to create the same taste consistency as it's meat based "cousin."

"Nouveau V The New Renaissance of Vegan and Vegetarian Cuisine" was released on May 22, 2017, by Christian Faith Publishing and has found its way on Amazon's top 100 best selling list in the Heart Healthy Category on several occasions. With over 100 vegan, and vegetarian recipes from the chef's catalogues of classic delicacies from around the world. Nouveau V has created diverse menus for vegans, vegetarians and omnivores alike. Chef Bev has been on a meatless diet for over 29 years, and uses this cookbook as a means in teaching people on how to maintain alternative meatless diets, or as she puts it "ethical diets."

A dedicated follower of the animal rights activist organization PETA, Chef Bev intends on donating a percentage of the proceeds from the sales of the books to PETA.
