Sweeney Todd in the West End. Amazing atmospheric production, incredible ensemble, and one of the best performances I have ever seen by Imelda Staunton as Lovett.

i find it funny that most of the shows that people chose (other than once) are shows that are either closing or had very very short runs. Looks like the best of the shows by this board are not the most popular by the rest of america.
If I count repeats of things I saw in 2011, I'd say Once and Peter and the Starcatcher. But if I'm only considering productions that I saw for the first time in 2012, I would have to say (and I'm definitely forgetting things since I saw a ton this year):
LONDON (3-way tie): Sweeney Todd, Singin' in the Rain, and Noises Off
BROADWAY: Drood and Virginia Woolf
OFF-BROADWAY: Gentlemen Prefer Blondes at Encores!
(I still have yet to see Picnic, The Heiress, A Civil War Christmas, Golden Boy, Glengarry Glen Ross, Bare, The Great God Pan, Tribes, Water by the Spoonful, and The Other Place -- several of which I will be seeing before the end of the year.)
